Recipe – Zucchini Enchiladas

Taco lover? Love to create quick, easy meals?  Looking for meat free meal inspirations?

Searching for more meatless meal ideas I stumbled upon meatless enchiladas.  Instead of making traditional enchiladas with flour tortillas and ground turkey or ground beef, which may be harder to digest and aide in storing more fat in your mid-section, zucchinis were used.  This create for an overall healthier, quick and easy dinner.

Here is what I used:


Black Beans

Mozzarella Cheese

Cheddar Cheese

Yellow Corn

Enchilada Sauce

You will need to slice the zucchini in two halves and scoop out part of the middle.  Once your zucchinis are ready cook them in the oven for about ten minutes, setting the oven at 350 degrees.  While the zucchini is cooking you can mix up the corn, beans and enchilada sauce on top of the stove let cook then simmer.  When your zucchinis are done take them out and sauce place mixture in the zucchinis, top with cheese and place back into oven for about another ten minutes.

Dinner is served.
